BBQ RECIPE - SLOWCOOKED SHORTRIB

Perfect match: Ginger Gem

INGREDIENTS 4 PERS

  • Shortrib Menapii
  • 500g chickpeas (cooked)
  • 1 packet of thyme 
  • 1 l yoghurt 
  • 1 lime
  • 2 tbsp Tahini (sesame paste)
  • 4 tbsp sesame oil
  • 2 cloves of garlic
  • cumin powder
  • Za'atar powder
  • 1 jar of sour cream
  • 150 ml soy sauce
  • 50 ml mirin
  • olive oil

PREPARATION

For the hummus: mix 500g chickpeas with 2 tbsp Tahin, 4 tbsp sesame oil, 6 tbsp olive oil, 2 garlic cloves, pinch of cumin powder, juice of 1 lime and 4 tbsp sour cream. Mix the yoghurt with freshly chopped thyme and zest of lime. Grill the short ribs on the BBQ and brush with the lacquer (150ml soy sauce, 150ml apple cider and 50ml mirin)

DRESSING

Dress the short rib on top of the hummus. Top with the yoghurt dressing, a few chickpeas and some za'atar powder.
