BBQ RECIPE - CHICKEN WINGS
INGREDIENTS 4 PERS
- Chicken wings Dierendonck precooked
- 500 gr couscous
- 1 carrot
- 1 pomegranate
- 1 packet of parsley
- 1 packet of coriander
- 1 packet of mint
- 1 lime
- 500 ml chicken stock
- 1 packet of sultanas
- 1 packet of pistachios
- Salt
- Black pepper
PREPARATION
Pour 500 ml of chicken stock boiling over 500 g of couscous and allow to swell. After a few minutes, taste to see if the grains are soft and al dente. Grate the carrot into julienne and cook briefly in boiling water. Mix the couscous with the carrot, finely chopped flat parsley, mint and coriander. Season with pepper and lime zest. Grill the chicken wings briefly on the bbq.
DRESSING:
Divide the chickenwings among the couscous salad and top with grilled pistachios, pomegranate and some freshly chopped mint and coriander.
